Key Responsibilities

The Chef de Cuisine holds full responsibility for the culinary soul and operational excellence of the event kitchens. Primary accountabilities include:

  • Personally demonstrating and ensuring the highest standards of food quality, consistency, and presentation across all event cuisine. Conducting daily tastings, monitoring product specifications, and minimising waste.
  • Achieving P and L targets through rigorous cost control, meticulous recipe costing, menu planning, and efficient kitchen operations. Maximising revenue and managing budgets for labour, food cost, and equipment.
  •  Mentoring, training, and leading the culinary team. Scheduling, conducting performance evaluations, fostering a collaborative environment, and ensuring adherence to all hotel standards and procedures.
  •  Enforcing the highest standards of kitchen hygiene, sanitation, and safety in line with HACCP and Raffles protocols. Liaising closely with the Chief Steward and Engineering departments.
  • Building guest loyalty, obtaining feedback, and working seamlessly with the Banquet and Events teams to deliver exceptional, personalised experiences.

Qualifications

This role demands a culinary artist with proven luxury experience and exceptional leadership. The required profile is:

  • A minimum Professional Certificate in a Culinary field and at least 4 years of experience in a similar Chef de Cuisine role within a luxury hotel environment.
  • Detailed, expert knowledge of local Chinese cuisine is essential. Pre-opening experience is a strong advantage.
  • Outstanding interpersonal and communication skills in English (an additional language is preferred), with the ability to inspire a diverse team and interact with all levels of colleagues and guests.
  • A sophisticated, humble leader with charisma, professional etiquette, and a keen eye for detail.
  • Proven financial acumen, innovation, and a passion for sustainable performance and service excellence.
  • Comfortable with media exposure and able to thrive in a dynamic, culturally diverse setting.
